Sour espresso?

I just recently got the breville oracle jet for a Christmas gift. I been trying to get the right shot pull but been having troubles. My shot has been pulling at around 25-30s but the shot always comes out sour tasting no matter the beans. How do I fix it and what can make the overall espresso making more consistent?
