making more unique characters

I've found that the key to characters isn't unique talents, but unique personalities in tandem with their talents. Best example I can think of is Ibuki and Sayaka, both version of Ultimate Muscians, and Nagito and Makoto, both Ultimate Lucky Students, who are so different that they aren't that comparable. Especially with how they use their talents.

In my Fangan, I've tried to implement this, but I don't think I'm completely there yet. Like my main Protagonist is the Ultimate Lawyer, but her gimmick is that she usually works as a defence lawyer for corporations, so the trials have people relying on her when she is completely unequiped for it. But is there any ways you've found helpful to "flavourblast" you're characters?

tdlr: how do you go about making your characters more interesting, even if they have a boring talent?
