Unique Vegetarian Eats in Sing

My wife and I are stopping in Singapore for 2 days for our honeymoon.

We are INCREDIBLY excited to eat some amazing food on this trip, but are feeling a little overwhelmed with all the amazing options available.

We are both religious vegetarians--don't eat eggs, meat, or fish (incl. shrimp paste and fish sauce), and would love to try and eat as much non-western food as possible.

Open to anything--hawker stands, casual restaurants, and nicer dining experiences, just want to optimize for unique experiences we can't get here in the US to open our minds to the beautiful world out there.

Worth mentioning, I really enjoyed eating at the Buddist stalls in random Hawker Centers I visited, but imagine locals will have much better reccos then my stumbling upons.

Have done some research on Happy Cow and Blogs, but figured the kind people of Reddit could point us in a more informed direction.
