Solo trip splurge: Yacht, Beach, or Boardwalk?

I'm taking a solo trip in a couple weeks. Cramming as much as I can into 4 nights, 3 days. 1st full day at Universal. My 1st 2 nights I'm planning on POR for boat access to Disney Springs and vibes. My 2nd 2 nights are currently at Pop Century but I'm wondering if it might be "worth it" to splurge on one of these other resorts. Is Jellyrolls open every night of the week? I want to check out Cake Bake for reasons and I'm thinking my last day before flying home is my only good day for that. I don't want to worry about getting back to a hotel to grab an Uber to be at an airport by 1:30pm.

If you were to splurge on one of these resorts for about $700/ night, which would it be? Or would you stick with Pop?

ETA- I have an afternoon reservation for the 8:15 EPCOT Candlelight Processional on the 3rd/last full day.
