How feasible is it to do take engineering courses during a co-op term if you don’t get a job?

At a UVic tour, the guide said that co-op is mandatory for engineering. She said that if you don’t get a job during one of the co-op terms you can take courses instead. How feasible is that, considering that courses are usually offered during certain semesters?
